Rudi's National Cook Off Here at the Rudi's National Cook Off going on right now at 4580! The three finalists have been flown in to Boulder to compete for the National Championship and the bragging Riggs of having their dish included on the 4580 menu. First up John from Long Island, NY with a gourmet gluten free grilled cheese sandwich., with tomato and pesto. The judges gave this dish a huge thumbs up! Next up is Tara with her hot pockets. Love the idea of this portable, take anywhere food! She used Rudi's GF bread to make bread crumbs and then added various ingredients to make crust which she cooks on the flat top briefly. Tara then fills the crust with filling then folds and crimps the edges together to make the pies. The pies are baked in the oven. They look amazing and so easy to make! WOW you can freeze these little beauties! The GF stories are really inspiring, it reminds me of our own family journey with gluten intolerance! The last contestant is presenting a prickly pear Rudified treat. This recipe is GF and DF yahoo! Anna Lynn comes to Boulder from near Phoenix to compete today. Her recipe nods it's head to Southern Cuisine. A yummy crust topped with three layers of strawberries, rhubarb, prickly pear, goat cheese yumminess. She uses no refined sugar either!
